Instructions
- In a medium bowl, whisk together the flour, sugar, salt, and the seeds scraped from the vanilla bean.
- In another bowl, beat the eggs and milk until combined. Gradually add the wet ingredients to the dry ingredients, whisking continuously until the batter is smooth and thin. Stir in the melted butter.
- Let the batter rest for 10 minutes to allow the flour to hydrate.
- Prepare the apple cinnamon filling: In a large skillet, melt 2 tbsp unsalted butter over medium heat. Add the diced apples, sprinkle with cinnamon, nutmeg, and brown sugar, and cook, stirring occasionally, until the apples are tender and syrupy, about 8-10 minutes. Remove from heat and stir in lemon juice. Set aside.
- Heat a nonstick skillet or crêpe pan over medium heat and lightly butter it. Pour about 1/4 cup (60 ml) of batter into the pan, swirling it to evenly coat the bottom. Cook until the edges lift and the bottom is lightly browned, about 1-2 minutes. Flip and cook for another 30 seconds. Transfer to a plate and cover to keep warm.
- Repeat with the remaining batter, buttering the pan as needed.
- To assemble, spoon a few tablespoons of the warm apple cinnamon filling onto each crêpe and fold or roll. Serve immediately.
Tips
- Ensure the batter is thin enough to spread easily; if too thick, thin with a tablespoon or two of milk.
- Use a vanilla bean for the batter to provide a deeper vanilla flavor that complements the warm apple filling.
