Aamras is the pulp of very ripe mangoes, lightly sweetened and scented with cardamom and saffron, served chilled in small bowls. It is eaten with hot puris or chapatis, and its texture should be thick enough to coat a spoon. Makes 6 servings in about 1 hr 50 min.

Scales from a half to a double batch; give a bigger batch a little more time.
3 ½ lb (1600 g)ripe Alphonso or Kesar mangoes, about 4 large, whole weight
Warm 1 tablespoon (15 ml) of the cold whole milk for a few seconds, crumble in the saffron threads and let steep 10 minutes.
Wash the ripe Alphonso or Kesar mangoes and soak them in cool water for 10 minutes, then pat dry.
Peel the mangoes and scrape all the flesh from the skins and seeds into a blender, discarding any stringy fibers. You should have about 900 g (3 1/2 cups) of flesh.
Add the sugar and blend until completely smooth and silky, about 1 minute. Taste and add a little more sugar only if the mangoes are tart.
Blend in the remaining whole milk a little at a time until the pulp is thick but pourable; very juicy mangoes may need less.
Stir in the saffron milk, ground green cardamom and dry ginger powder.
Cover and refrigerate until well chilled, at least 1 hour, and serve in small bowls.
Tips
Mangoes should be fragrant and give slightly when pressed; unripe fruit makes sour, thin aamras.
Taste before adding sugar: Alphonso mangoes often need none.
For a perfectly smooth texture, push the blended pulp through a coarse sieve.
Good with hot puris.
