Rice pudding
A creamy dessert of rice slowly cooked in milk and sugar, often flavored with vanilla, cinnamon or nutmeg.

- Fillings, creams, frostings and sauces
Short- or medium-grain rice such as arborio releases starch as it cooks and gives the creamiest texture. Rice pudding is cooked on the stove, stirring often, or baked slowly in the oven; it thickens a lot as it cools.
Versions are found worldwide, including Spanish arroz con leche, Indian kheer and Scandinavian risalamande.
