Also called: moderate oven, hot oven
A slow oven is roughly 300 to 325°F (150 to 165°C), suited to cheesecakes, meringues and custards. A moderate oven of 350 to 375°F (175 to 190°C) covers most cakes, cookies and quick breads. A hot oven of 400 to 450°F (200 to 230°C) is used for puff pastry, pizza and many breads.
Home ovens often run hotter or cooler than their setting, so an oven thermometer helps. Convection ovens are usually set about 25°F (15°C) lower than the recipe says.
