Key limes are small, yellow-green limes from the Florida Keys with a sharper, more aromatic juice than common Persian limes. The acid in the juice thickens the condensed milk and yolks, and a short bake sets the filling firmly enough to slice.

The filling should be pale yellow, not green; bright green versions get their color from food coloring. The pie is served well chilled, and it needs several hours in the refrigerator to set completely.
