Instructions
- In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, fine sea salt, and the seeds and pod of the split vanilla bean. Heat over medium heat until the mixture is hot and sugar is dissolved, but not boiling, about 5-7 minutes. Remove from heat and let vanilla infuse for 15 minutes, then remove the vanilla pod.
- In a bowl, whisk the egg yolks until smooth. Slowly pour about 1 cup (240 ml) of the warm cream mixture into the yolks, whisking constantly to temper the eggs.
- Return the yolk and cream mixture to the saucepan. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens slightly and reaches 170-175°F (77-79°C), about 5 minutes. Do not boil.
- Strain the custard through a fine mesh sieve into a clean bowl to remove any coagulated bits. Stir in the fresh key lime juice and grated key lime zest. Let cool to room temperature.
- Cover the custard and chill in the refrigerator for at least 2 hours until thoroughly chilled.
- Meanwhile, prepare the graham cracker crumble by mixing the graham cracker crumbs, melted butter, and light brown sugar in a small bowl until evenly combined.
- Churn the chilled custard in an ice cream maker according to the manufacturer's instructions until soft-serve consistency, about 20-25 minutes.
- During the last 5 minutes of churning, add half of the graham cracker crumble to the ice cream. Transfer the ice cream to a container, swirl in the remaining crumble, and freeze until firm, at least 45 minutes.
- Serve scoops of key lime pie ice cream garnished with extra graham cracker crumbs or thin lime slices if desired.
