Crumb coating
Spreading a thin first layer of frosting over a cake to trap loose crumbs before the final coat.

- Techniques and preparation methods
Also called: crumb coat
After the layers are stacked and filled, a thin coat of frosting is spread over the top and sides and scraped smooth; it does not need to look neat. The cake is then chilled until this layer is firm, so the final, thicker coat goes on clean, without crumbs showing through.
It is especially useful for dark cakes under light frosting and for smooth, sharp-edged finishes.
