Bourbon vanilla

Vanilla from the Indian Ocean islands, chiefly Madagascar, made from Vanilla planifolia, prized for its rich, creamy, sweet flavor.

Also called: Madagascar vanilla

The name comes from Île Bourbon, now Réunion, where vanilla was first grown in the region; it has nothing to do with bourbon whiskey. Madagascar produces most of the world's vanilla and is the main source of Bourbon vanilla beans and extract today.

Bourbon vanilla is the classic all-purpose vanilla for baking, with deep, creamy notes that hold up in the oven, unlike the more floral Tahitian vanilla.
