Bananas
A soft, sweet tropical fruit used in baking mainly when very ripe, for banana bread, muffins, cream pies and puddings.

- Baking ingredients and additives
As bananas ripen, their starch turns to sugar, and their peels develop brown spots. Heavily spotted or black bananas are sweeter and more aromatic, and they mash easily into batters, adding moisture and natural sweetness. One medium banana gives about ⅓ to ½ cup (100 to 120 g) of mashed fruit.
To ripen bananas quickly for baking, roast them in their peels at about 300°F (150°C) until black, 15 to 20 minutes.
