Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Make the flax eggs: stir 2 tablespoons of ground flaxseed with 6 tablespoons of water and let it sit for 5 minutes, until thick and gel-like.
  3. Whisk the flour, sugar, baking powder, and salt together in a large bowl.
