Instructions
- Mix the flour, yeast, sugar and salt. Add the milk, eggs and butter and knead 8 to 10 minutes into a soft, smooth dough. Cover and rise about 1 hour, until doubled.
- Beat the cheese with the sugar, sour cream, egg and vanilla until smooth.
- Divide the dough into 12 balls and flatten each into a round. Shape on lined baking sheets.
- Press a deep well into the center of each bun, leaving a thick rim, and rest 20 minutes. Heat the oven to 350 F (175 C).
- Fill the wells with the cheese mixture, brush the rims with yolk glaze and bake 22 to 25 minutes, until the dough is golden and the filling just set.
- Cool on a rack. Serve warm or at room temperature.
Tips
- Drain wet cheese in a towel for an hour or the filling will run.
- Make the well deep and the rim thick so the filling stays in.
- Raisins or a spoon of jam can go in the filling.
- Bake until the cheese filling is set (at least 160 F / 71 C) and refrigerate leftovers within 2 hours.
