This latte balances espresso, steamed milk, and vanilla without turning the drink overly sweet. It combines espresso, mascarpone richness, savoiardi where structurally appropriate, and a restrained bitter-cocoa finish. Best with Ugandan vanilla (bold, chocolatey, smoky); any pure vanilla works.

Instructions
- Brew the espresso into a large mug and stir in the sugar and vanilla while the coffee is hot. Keep the espresso as the distinct coffee layer for the tiramisu profile. Stir until the sweetener is fully dissolved.
- Steam the milk until it reaches about 150°F to 155°F (65°C to 68°C), creating a fine, glossy foam. Separately whisk the mascarpone with the heavy cream and confectioners' sugar until smooth and softly spoonable. The pitcher should feel hot but the milk should not smell cooked.
- Pour the steamed milk into the espresso, holding back the foam at first, then spoon or pour the foam over the top. Spoon the mascarpone cream over the finished latte and dust lightly with unsweetened cocoa. Serve immediately while the milk is silky and the espresso is aromatic.
Tips
- Vanilla bean paste swaps 1:1 for the extract and adds visible vanilla seeds; for a whole bean, use the seeds of 1 bean in place of 2 teaspoons of extract.
- Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
