Instructions
- Sprinkle the gelatin over the cold water and let stand for 5 minutes.
- Bring the sugar, 1/3 cup water, and corn syrup to a boil in a saucepan, stirring until the sugar dissolves. Remove from the heat.
- Stir in the bloomed gelatin until dissolved, then the condensed milk.
- Pour over the white chocolate and vanilla bean paste, let stand 5 minutes, then blend with an immersion blender held below the surface so you don't add bubbles. Strain through a fine-mesh sieve.
- Cool to 90 to 95°F, stirring gently now and then.
