  • ⅔ cup (133.0 g)granulated sugar
  • ⅛ tspfine sea salt

Instructions

  1. Heat the milk and 1 cup of the cream until steaming. Put the remaining cream in a bowl set in an ice bath.
  2. Whisk the yolks, sugar, and salt, slowly whisk in the hot milk, then return to the pan.
  3. Cook over medium-low heat, stirring constantly with a spatula, until the custard coats the spatula and reaches 175°F, 5 to 7 minutes. Don't let it boil.
  4. Strain into the cold cream, stir in the vanilla bean paste, and chill until very cold, at least 4 hours.
  5. Churn in an ice-cream maker according to its directions, then freeze until scoopable, about 4 hours. Serve a scoop alongside each slice of warm pie.

  • Vanilla swap: pure vanilla extract works 1:1 in place of the paste; you'll just lose the specks.
  • Best vanilla for this: Madagascar (rich, creamy, classic), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
