Instructions
- Heat the oven to 325 F (165 C) and line a baking sheet with parchment.
- Toss the oats, pecans, brown sugar, cinnamon and salt with the melted butter. Spread on the sheet and bake 15 to 18 minutes, stirring once, until golden. Cool completely; it will crisp as it cools.
- Simmer the strawberries, granulated sugar and lemon juice over medium heat 8 to 10 minutes until jam-like. Cool, then refrigerate.
- Whip the cream with the powdered sugar and vanilla to soft peaks, then fold in the Greek yogurt until smooth and thick.
- In 4 tall glasses, layer 2 tablespoons of cream, a layer of compote and a sprinkle of crunch.
- Repeat twice, ending with cream and a final scatter of crunch.
- Chill 30 minutes before serving, or serve right away for the crispiest crunch.
Tips
- Add the crunch just before serving to keep it crisp.
- Hang the yogurt in a sieve for 20 minutes if yours is thin.
- Use clear glasses so the layers show.
- Good with coffee.
