Instructions

  1. Heat the oven to 350°F (175°C). Grease two 8-inch round cake pans, line the bottoms with parchment, and grease the parchment.
  2. Stir the light brown sugar into the granulated sugar until evenly blended with no clumps; use this mixture wherever the recipe calls for sugar.
  3. Beat the butter and sugar on medium-high speed for 3 to 4 minutes. The mixture should be pale, fluffy, and visibly increased in volume.
  4. Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla. If the batter begins to look curdled, add a spoonful of the measured flour.
  5. Warm the measured milk with the Assam tea until steaming but not boiling. Remove from the heat, steep for 5 minutes, strain, add a little more milk if needed to bring it back to the original amount, and cool to room temperature. Whisk the flour, baking powder, salt, cinnamon, ginger, cardamom, and cloves together. Add the dry ingredients in three additions, alternating with the cooled chai-infused milk in two additions, beginning and ending with the flour. Mix on low and stop as soon as the batter is smooth.
  6. Divide the batter evenly between the pans and smooth the tops. Bake for 28 to 32 minutes. The cakes are done when the tops spring back lightly and a tester inserted near the center comes out clean or with a few moist crumbs.
  7. Cool the cakes in the pans for 10 minutes, then turn them onto a rack and let them cool completely before filling or frosting.
