Instructions

  1. Brew the espresso into a large mug and stir in the sugar and vanilla while the coffee is hot. Stir until the sweetener is fully dissolved.
  2. Heat the measured milk with the Assam tea, cinnamon, ginger, cardamom, and cloves until steaming but not boiling. Remove from the heat, steep for 5 minutes, strain, restore any evaporated milk to the measured amount, then steam the infused milk to about 150°F to 155°F (65°C to 68°C) with a fine, glossy foam. The pitcher should feel hot but the milk should not smell cooked.
  3. Pour the steamed milk into the espresso, holding back the foam at first, then spoon or pour the foam over the top. Serve immediately while the milk is silky and the espresso is aromatic.
