Instructions

  1. Split the vanilla bean lengthwise with a paring knife and scrape out the seeds with the back of the blade.
  2. Combine the sugar and water in a heavy saucepan over medium heat, stirring only until the sugar dissolves.
  3. Stop stirring and let it boil, swirling the pan occasionally, until the syrup turns a deep amber, 8 to 10 minutes.
  4. Remove from the heat and whisk in the butter; it will bubble up vigorously, so stand back.
  5. Slowly whisk in the cream, then return the pan to low heat for 1 minute, whisking until smooth.
  6. Off the heat, stir in the vanilla seeds and salt. Let cool; the sauce thickens as it cools. Refrigerate for up to 2 weeks.
