Baking tools for this recipe

Instructions

  1. Process the hazelnuts and powdered sugar in a food processor for 6 to 8 minutes, scraping down, until a smooth, runny paste forms.
  2. Add the cooled melted chocolate, butter, cocoa and salt and process until smooth and spreadable. Chill 15 minutes if too runny.
  3. Trim the wafers to a stack that fits your serving plate (a round of about 18 cm / 7 inches, or a rectangle).
  4. Place one wafer on a plate and spread with a thin layer of cream. Continue stacking and spreading, leaving the top wafer bare; use about 10 layers.
  5. Press the stack down gently, then spread the remaining cream thinly around the sides and chill 2 hours.
  6. Glaze: heat the cream until steaming, pour over the chopped chocolate, wait 2 minutes and stir until smooth. Cool until thick but still spreadable.
  7. Spread the glaze over the top and sides of the cake, smoothing with a spatula.
  8. Chill at least 2 more hours before slicing with a hot, dry serrated knife.

Tips

  • Spread each layer thinly so the cake stays level.
  • Wafers soften with time; a short chill gives crisp layers, a longer one a softer cut.
  • Press a small weight on top while it chills.
  • Good with espresso.
