Instructions

  1. Heat the oven to 375°F and parbake the crust with pie weights for 15 minutes; remove the weights.
  2. Whisk the sugar, cornstarch, and salt in a saucepan, then whisk in the cream and add the butter.
  3. Cook over medium heat, whisking constantly, until thick and bubbling, about 8 minutes. Whisk in the vanilla.
  4. Pour into the crust, dust with nutmeg if using, and bake until bubbling at the edges, 15 to 20 minutes.
  5. Cool completely, then refrigerate until firm, at least 3 hours.
