Baking tools for this recipe

Instructions

  1. Butter a 1.5-pint (900 ml) pudding basin. Cut a round of parchment and a round of foil, each 4 inches larger than the top, and pleat them together.
  2. Mix the flour, suet, breadcrumbs, sugar, currants, lemon zest and salt in a bowl.
  3. Add the milk and stir to a soft, dropping-consistency dough. Add a splash more if dry.
  4. Scrape the dough into the basin and level the top. Cover with the pleated paper and foil, tie tightly with string and make a string handle.
  5. Place the basin on a trivet or upturned saucer in a large pot. Pour in boiling water to come halfway up the basin sides. Cover and simmer gently for 2 hours, topping up with boiling water as needed.
  6. Carefully lift the basin out, remove the cover and run a knife around the edge. Turn out onto a warm plate.
  7. Cut into thick wedges and serve with hot custard.

Tips

  • Do not let the pot boil dry; check the water level every 30 minutes.
  • Leave room in the basin for the pudding to rise.
  • Vegetable suet works well as a vegetarian substitute.
  • Serve hot, with the center reaching at least 165 F (74 C); refrigerate leftovers within 2 hours.
