Instructions

  1. In a large mixing bowl, combine the all-purpose flour, sugar, instant yeast, and salt. Stir to distribute evenly.
  2. In a separate bowl, whisk together the warmed milk, egg, melted butter, and vanilla extract.
  3. Add the active sourdough starter to the dry ingredients, then pour in the milk mixture. Stir with a wooden spoon or dough hook until a rough dough forms.
  4. Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and slightly elastic, or knead using a stand mixer fitted with a dough hook for 6-8 minutes on medium speed.

  7. Roll the dough out on a lightly floured surface to about 1/2 inch (1.25 cm) thickness. Use a doughnut cutter or two round cutters (about 3 inch / 7.5 cm diameter for the outer ring, 1.5 inch / 4 cm for the hole) to cut doughnuts. Re-roll scraps once and cut more doughnuts.
  8. Place the doughnuts on a parchment-lined baking sheet, cover lightly with plastic wrap or a kitchen towel, and proof at room temperature for 45–60 minutes until puffed but not overly risen.
  9. Heat the frying oil in a deep pot or heavy-bottomed pan to 350°F (175°C). Use a thermometer to maintain consistent temperature.
  10. Carefully fry the doughnuts in batches, 2-3 at a time, for about 1 to 1.5 minutes per side, or until golden brown. Avoid overcrowding the pan.
