Instructions
- Heat the broiler. Spread the marshmallows on a parchment-lined baking sheet and broil 4 inches from the heat until deep golden, 30 to 60 seconds; watch constantly.
- Whisk the water, both sugars and the cocoa in a medium saucepan and bring to a simmer over medium heat, stirring until the sugar dissolves.
- Scrape in the toasted marshmallows and the crushed graham crackers and simmer gently, stirring, until the marshmallows melt, about 5 minutes.
- Remove from the heat and steep for 15 minutes.
- Strain through a fine-mesh sieve lined with a coffee filter or cheesecloth, then stir in the vanilla and salt.
- Cool, skim off any foam and refrigerate in a clean bottle.
Tips
- The marshmallows foam when they hit the hot syrup; that's normal and strains out.
- Rim the glass with chocolate sauce and crushed graham crackers for a full s'mores drink.
