Instructions

  1. Make the pâte sucrée dough: In a bowl, whisk together the flour, confectioners' sugar, and fine sea salt.
  2. Add the cold unsalted butter cubes and rub them into the dry ingredients with your fingertips until the mixture resembles coarse crumbs with some pea-size pieces.
  3. Mix in the egg yolk and ice water until the dough just comes together. Do not overmix.
  4. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan with a removable bottom.
  6. Carefully transfer the dough to the tart pan, trim excess, and prick the bottom with a fork. Chill in the pan for 15 minutes.
  7. Line the tart shell with parchment and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment and bake for 10 more minutes until golden and cooked through. Cool on a wire rack.
  8. Make the vanilla pastry cream: In a saucepan, heat the whole milk and the split vanilla bean pod with its scraped seeds until almost boiling. Remove from heat and let steep for 10 minutes, then remove the pod.
  9. In a bowl, whisk together the egg yolks, granulated sugar, and cornstarch until smooth and pale.
  10. Gradually whisk about 1/3 of the hot milk into the egg yolk mixture to temper it, then pour everything back into the saucepan.
  11. Cook over medium heat, whisking constantly, until the mixture thickens and reaches 175°F (79°C). Continue to cook for 1 minute while stirring.
  12. Remove from heat, whisk in the butter and vanilla extract until smooth. Transfer to a bowl, cover with plastic wrap directly on the surface, and refrigerate until cold, about 2 hours.
  13. Spread the chilled pastry cream evenly into the cooled tart shell.
  14. Arrange the fresh raspberries neatly on top of the cream.
  15. Warm the apricot jam slightly and brush over the raspberries to glaze and shine the tart.
  16. Chill the tart for 20 minutes before serving to set the glaze.
