Baking tools for this recipe

Instructions

  1. Soak the chopped candied fruit in the kirsch for at least 30 minutes.
  2. Heat the milk, cream and half the sugar in a saucepan until steaming. Whisk the yolks with the remaining sugar in a bowl.
  3. Slowly whisk about a cup of the hot milk into the yolks, then pour everything back into the pan.
  4. Cook over medium-low heat, stirring constantly, until the custard coats a spoon and reaches 170 F (77 C).
  5. Strain into a bowl set over ice, stir in the almond extract and chill completely, at least 4 hours.
  6. Churn until soft-serve thick, then fold in the fruit and its kirsch.
  7. Freeze in a container until firm, 4 hours. For the sauce, warm the jam, water and lemon juice until pourable and serve over scoops.

Tips

  • Cook the custard to 170 F (77 C) so the eggs are safe but smooth.
  • Soak the fruit in advance or it will stay chewy and sugary.
  • Warm the sauce just until runny so it does not melt the ice cream.
  • The custard base is cooked to 170 F (77 C), above the 160 F (71 C) safe minimum for eggs.
