Instructions

  1. Rub the butter into the flour, baking powder and salt until the mixture looks like coarse crumbs. Stir in the yogurt and vanilla and knead briefly into a soft dough.
  2. Divide the dough into two equal pieces, wrap and chill 30 minutes.
  3. Filling: cook the grated apples with the sugar in a wide pan over medium heat for 10 to 12 minutes, stirring, until soft and most of the juice has cooked away. Stir in the cinnamon, vanilla and lemon juice and cool completely.
  4. Heat the oven to 350 F (175 C). Line a 9 x 13-inch pan with parchment.
  5. Press or roll one piece of dough to fit the pan base, spread the cooled filling over it.
  6. Roll the second piece to the same size, lay it on top and press the edges together with a fork. Prick the top a few times.
  7. Bake 35 to 40 minutes, until golden. Cool completely in the pan, dust with powdered sugar and cut into squares.

Tips

  • Cook the apples until the pan is nearly dry so the base stays crisp.
  • Cool the filling fully before closing the pie.
  • Cutting is neatest when the pie is completely cold.
  • Good with black tea or coffee.
