Instructions

  1. Rub the butter into the flour, sugar, baking powder, zest and salt until the mixture looks like coarse crumbs.
  2. Stir in the whole egg, yolks and vanilla and gently press into a smooth dough. Wrap and chill 30 minutes.
  3. Heat the oven to 350 F (175 C). Butter a 9-inch (23 cm) tart pan with a removable bottom.
  4. Cut the quince paste into pieces and warm with the water in a small pan over low heat, stirring, until smooth and spreadable. Cool slightly.
  5. Roll about two-thirds of the dough to fit the pan and press it in, trimming the edge.
  6. Spread the quince filling in an even layer.
  7. Roll the remaining dough, cut 1/2 inch (1.2 cm) strips and arrange a lattice over the filling. Press the ends into the rim.
  8. Bake 40 to 45 minutes, until the crust is golden. Cool completely in the pan before slicing.

Tips

  • The dough is soft; chill it again if it becomes sticky.
  • Smooth the filling thoroughly so there are no lumps.
  • Guava paste or sweet potato paste make traditional alternatives.
  • Good with mate or coffee.
