Instructions

  1. Heat the oven to 350 F (175 C). Butter and flour a 2-quart (7-inch / 18 cm) dome mold or oven-safe bowl.
  2. Grind the almonds with 2 tablespoons of the sugar into a fine flour.
  3. Beat the egg yolks with the remaining sugar until pale and thick. Stir in the almond flour, extract and zest.
  4. Sift in the flour and potato starch and stir in the melted butter.
  5. Whip the whites to stiff peaks and fold in two additions into the batter.
  6. Scrape into the mold and bake 55 to 60 minutes, covering with foil if the top browns too fast, until a skewer comes out clean.
  7. Cool 10 minutes, unmold onto a rack and cool completely.
  8. Melt the chocolate with the butter over simmering water. Spread over the cooled cake in an even coat and let set 30 minutes.

Tips

  • Grind almonds with sugar to stop them from turning oily.
  • Fold the whites gently to keep the cake light.
  • Cool the chocolate slightly for a glossy, even coat.
  • Good with vin Santo.
