Instructions

  1. Mix the almonds, sugar and lemon zest in a heatproof bowl. Stir in the whole egg until a thick paste forms.
  2. Set the bowl over a pan of barely simmering water and stir 3 to 4 minutes until the paste is hot and reaches 160 F (71 C). Cool completely.
  3. Knead into a smooth dough, wrap and refrigerate 2 hours.
  4. Heat the oven to 400 F (200 C) with the rack in the upper third and line a baking sheet with parchment.
  5. Divide the dough into 24 pieces of about 20 g and roll into balls.
  6. Dip each ball in the beaten yolks, then roll in pine nuts, pressing lightly so they stick. Place on the sheet.
  7. Brush lightly with the whole beaten egg. Bake 8 to 10 minutes, until the nuts are golden brown.
  8. Cool completely on the tray before moving.

Tips

  • Watch closely: pine nuts brown fast.
  • Wet hands slightly if the dough sticks while rolling.
  • Roll some in sliced almonds, cocoa or coconut instead for variety.
  • Heat the egg-almond mixture to 160 F (71 C) before shaping.
