  • 2 ¼ tspunflavored gelatin, 1 envelope
  • ¼ cup (60.0 ml)cold water
  • 1.0 cup (240.0 ml)fresh orange juice
  • ¼ cup (50.0 g)granulated sugar, for the fruit base
  • 3.0 (99.0 g)large egg whites
  • ½ cup (100.0 g)granulated sugar, for the meringue

Instructions

  1. Sprinkle the gelatin over the cold water and let stand for 5 minutes.
  2. Warm the orange juice with the sugar for the base in a small saucepan until the sugar dissolves. Remove from the heat, stir in the gelatin until dissolved, then add the vanilla.
  3. Refrigerate, stirring every 10 minutes, until it thickens to the consistency of raw egg whites, 30 to 45 minutes.
  4. Meanwhile, whisk the egg whites, the sugar for the meringue, and the salt in a heatproof bowl set over simmering water until the mixture reaches 160°F, about 4 minutes. Remove and whip on high speed to stiff, glossy peaks.
  5. Fold the meringue into the thickened base until no streaks remain.
  6. Mound into the crust and refrigerate until set, at least 4 hours.
