Baking tools for this recipe

Instructions

  1. Make the crust: stir the flour, sugar and salt, work in the butter until pea-size, then add ice water just until the dough holds. Divide in two, flatten into disks and chill 1 hour.
  2. Squeeze each grape so the pulp slips out; put the pulp in a saucepan and the skins in a bowl.
  3. Simmer the pulp over medium heat for 10 minutes, mashing, until the seeds loosen. Press through a sieve over the skins to remove the seeds, scraping all the thick pulp into the skins.
  4. Cool the mixture completely, about 30 minutes, then stir in the sugar, cornstarch, lemon juice and salt.
  5. Heat the oven to 425 F (220 C) with a rack on the lowest level. Roll one disk to 12 inches and fit it into a 9-inch pie pan.
  6. Pour in the filling. Roll the second disk, cut it into strips and weave a lattice. Seal and flute the edges, then chill for 10 minutes.
  7. Brush with egg wash and sprinkle with coarse sugar. Bake on a sheet pan 20 minutes, then lower to 375 F (190 C) and bake 25 to 30 minutes more until the crust is golden and the filling bubbles thickly.
  8. Cool at least 3 hours so the filling sets before slicing.

Tips

  • Save every bit of the skins; they carry the flavor and color.
  • Cool the cooked pulp before adding cornstarch to avoid clumps.
  • Concord grapes are essential; table grapes will not give the same flavor.
  • Good with vanilla ice cream or hot coffee.
