Instructions
- In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, skim milk powder, and fine sea salt.
- Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and pod to the saucepan.
- Heat the milk mixture over medium heat, stirring occasionally, until the mixture reaches 170°F (77°C), just before boiling and the sugar is dissolved.
- Remove from heat and let the vanilla infuse for 15 minutes.
- Remove the vanilla bean pod and discard.
- Whisk the mango purée into the custard base until smooth and combined.
- Cover the mixture with plastic wrap, pressing it directly onto the surface, and chill in the refrigerator for at least 1 hour to fully cool and develop flavor.
- Chop the fresh mango into small chunks and reserve.
- Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions until thickened and creamy, about 30-40 minutes.
- During the final 5 minutes of churning, add the fresh mango chunks to incorporate evenly.
- Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up before serving.
- Let the gelato sit at room temperature for 5 minutes before scooping to soften slightly.
Tips
- Adding fresh mango chunks during the last churn cycle gives delightful texture and bursts of fresh flavor.
- Use a ripe, fragrant vanilla bean for a strong vanilla aroma that complements the mango perfectly.
