Baking tools for this recipe

Instructions

  1. Heat 1000 ml of the water to about 140 F (60 C). Mix the rye flour and rye malt in a large bowl and stir in the warm water until smooth. Cover and rest 1 hour so the malt turns starch into sugar.
  2. Stir in the molasses, sugar, orange zest and salt. Rest 30 minutes.
  3. Bring the remaining 500 ml of water to a boil and stir it into the batter a little at a time.
  4. Heat the oven to 300 F (150 C). Pour the batter into a shallow 2-quart (2 L) baking dish.
  5. Bake about 3 hours, stirring in a few tablespoons of hot water if the top looks dry, until the pudding is very dark and thick.
  6. Cool to room temperature, cover and refrigerate at least 12 hours.
  7. Serve cold in small bowls with cold cream and sugar.

Tips

  • Rye malt is the hard part to find outside Finland. Brewing suppliers often stock it; barley malt changes the flavor.
  • A shallow dish bakes more evenly than a deep one.
  • Cover the dish with foil after the first 90 minutes if the surface dries or darkens too fast.
  • Good with strong black coffee.
