Baking tools for this recipe

Instructions

  1. Wash the rice and soak it 4 hours or overnight in cold water. Drain well.
  2. Steam the rice 30 to 40 minutes, until cooked through and tender. Spread out and cool completely to room temperature.
  3. Sprinkle the crushed ragi evenly over the rice and toss with clean, dry hands.
  4. Pack into a clean, dry, lidded container, press lightly, and cover. Ferment at room temperature for 2 to 3 days, until it smells sweet and winey and is soft and juicy.
  5. Squeeze out and discard the liquid and mash the tape to a smooth paste.
  6. Cook the tape with the coconut milk, palm sugar, pandan and salt over low heat, stirring constantly for 35 to 45 minutes, until it forms a thick, dark, glossy mass that pulls from the pan.
  7. Spread into a lined pan, cool completely, and cut into small pieces.

Tips

  • Everything touching the rice must be clean and dry for a safe ferment.
  • Keep the heat low; sugar and rice paste scorch easily.
  • Stir without stopping toward the end.
  • Ferment only in clean containers. Discard the batch if you see pink, orange, black or fuzzy mold, or smell anything sour or rotten. Fermenting rice produces alcohol.
