  • ½ cup (75.0 g)frozen lychee, peeled and pitted
  • ½ cup (120.0 g)ice cubes
  • pinch fine sea salt

Instructions

  1. Add the coconut milk to a high-speed blender first.
  2. Add the frozen mango chunks, frozen lychee, and vanilla extract.
  3. Add the ice cubes and fine sea salt.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds until completely smooth.
  5. Check the consistency and blend in 1–2 tablespoons additional coconut milk if too thick, or a few extra ice cubes or frozen fruit if too thin.
  6. Pour into a 16-ounce glass and serve immediately.

Tips

  • Use frozen lychee for the best texture and flavor. If lychee is unavailable, canned lychee packed in water (drained) can be used but adjust sweetness accordingly.
