Instructions

  1. Cook the apples, sugar, lemon juice and water over medium heat, stirring, 20 minutes until thick and jam-like. Cool completely.
  2. Mix the flour, yeast, sugar and salt. Add milk, butter and egg and knead 8 minutes to a smooth dough. Rest in a covered bowl 1 hour until puffy.
  3. Roll the dough about 1/8 inch (3 mm) thick and cut 10 circles about 5 inches (13 cm) wide.
  4. Put 2 tablespoons of cooled jam on one half of each circle. Fold over, press the edge flat and crimp with a fork to seal fully.
  5. Rest the pastries 15 minutes. Heat the oil to 350 F (175 C) in a deep pot.
  6. Fry 2 or 3 at a time, 2 to 3 minutes per side, until deep golden. Drain on paper towels.
  7. Dust with powdered sugar and serve warm.

Tips

  • Cool the jam completely, or it will leak.
  • Seal edges well; dust the fork with flour.
  • Keep oil at 350 F; too cool and the pastries absorb oil.
  • Use a thermometer and keep hot oil away from children; never leave it unattended.
