Baking tools for this recipe

Instructions

  1. Divide the bean paste into 8 balls (25 g each) and roll smooth.
  2. Whisk the rice flour, sugar and water in a microwave-safe bowl until smooth. Stir in the mugwort powder.
  3. Cover loosely and microwave 2 minutes, stir with a wet spatula, then microwave 1 1/2 minutes and stir again. Repeat until the dough is glossy and sticky and no white remains.
  4. Dust a tray with potato starch and turn the hot dough out. Dust the top and let cool 5 minutes, until you can handle it.
  5. Divide into 8 pieces. Flatten each into a disk and wrap around a bean paste ball, pinching the seams closed.
  6. Roll gently, dust off the extra starch, and serve the same day.

Tips

  • Wet your hands and tools; mochi sticks to everything.
  • Fresh mugwort should be blanched and squeezed dry before chopping.
  • Do not refrigerate; mochi hardens.
  • Mochi is a choking hazard. Cut into small pieces for children and older adults.
