Instructions

  1. Steep Earl Grey black tea in the water using 175°F / 80°C for green, jasmine or white tea or 200°F / 93°C for black, oolong or rooibos (matcha: whisk). Strain tea leaves; do not leave them in the drink.
  2. Stir in blueberry syrup while the infusion is warm enough to dissolve it, then rapidly chill in a shallow covered jug.
  3. Divide ice between two glasses and pour the tea and cold milk over it.
  4. Whisk vanilla into the cream, divide over the glasses, and serve immediately.

Tips

  • Steeping green and white tea in boiling water can make the drink bitter; adjust for the product used.
  • If fruit curd or acidic fruit syrup is present, blend it thoroughly or serve immediately to minimize dairy curdling.
  • Perishables must not sit at room temperature longer than 2 hours, or 1 hour above 90°F (32°C).
  • Good with cookies, cakes, and pastries.
