Instructions
- Warm the milk and sugar in a saucepan until the sugar dissolves, then take off the heat and stir in the rose water.
- Spread a ladle of warm milk in the bottom of a 9 by 9-inch dish. Lay one güllaç sheet in the dish, trimming to fit.
- Ladle warm milk over the sheet, press gently until soft, and repeat with about half of the sheets.
- Scatter the walnuts evenly, then add the remaining sheets in the same way, moistening each one.
- Pour the remaining milk over the top so every layer is soaked.
- Cover and refrigerate at least 5 hours, until it holds a clean cut.
- Cut into squares and top with pistachios and pomegranate seeds.
Tips
- Warm, not boiling, milk keeps the sheets delicate.
- Walnuts can tint the sheets; for a pure white dessert use hazelnuts or pistachios.
- Add the rose water off the heat so its aroma stays.
- Dairy dessert: keep refrigerated and discard after 3 days.
