Baking tools for this recipe

Instructions

  1. Dissolve the sugar in the water with the vanilla in a small pan over heat. Cool the syrup completely.
  2. Steam the cassava chunks 30 to 40 minutes, until fork-tender, soft and translucent. Cassava must be fully cooked and never eaten raw.
  3. Steam the grated coconut with the pinch of salt for 10 minutes and let cool.
  4. Mash the hot cassava with the butter and salt until very smooth, removing any tough core fibres. Gradually mash in the sugar syrup to make a smooth, pliable dough.
  5. Divide into portions and tint some with pandan paste or color if you like. Roll each portion into a log about 1 inch (2.5 cm) thick.
  6. Cut into 1-inch (2.5 cm) pieces and roll in the steamed coconut. Serve at room temperature.

Tips

  • Mash cassava while it is hot; cold cassava turns gummy and stiff.
  • Remove the woody center fibre from each chunk before steaming or mashing.
  • Palm sugar gives a richer brown getuk.
  • Good with hot tea or coffee.
