Instructions

  1. Melt 2 tablespoons semisweet chocolate chips gently in a microwave or over a double boiler until smooth.
  2. Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream and the melted chocolate.
  3. Add 1/2 teaspoon pure vanilla extract.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tablespoons whipped cream and 1 tablespoon graham cracker or pie-crust crumbs.
  7. Serve immediately with a wide straw and long spoon.

Tips

  • For a stronger chocolate flavor, use good-quality semisweet chocolate chips. You can make ahead the crushed pie crust and store it to keep the topping crunchy.
