Instructions
- Prepare the pâte sucrée dough: In a large bowl, whisk together all-purpose flour, confectioners' sugar, and salt.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the egg yolk and 1 tablespoon ice water; mix gently until the dough just comes together. Add a little more ice water if it seems dry.
- Form the dough into a disk, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
- Preheat oven to 375°F (190°C). Roll out chilled dough on a lightly floured surface into a 12-inch circle. Carefully transfer to a 9-inch tart pan with a removable bottom; press into the pan and trim excess.
- Prick the bottom with a fork. Line the crust with parchment and fill with pie weights or dried beans. Blind bake for 15 minutes.
- Remove weights and parchment; bake another 8 minutes until the crust is set and lightly golden. Remove from oven but keep oven on.
- Prepare frangipane filling: In a bowl, cream softened butter with granulated sugar until smooth and fluffy.
- Add almond flour and mix to combine.
