Instructions

  1. Heat the oven to 350 F (175 C). Line two baking sheets with parchment or silicone mats.
  2. Combine the butter, cream, sugar and honey in a saucepan and bring to a boil over medium heat, stirring. Boil 1 minute, then remove from the heat.
  3. Stir in the flour, almonds, cherries and orange peel until evenly coated.
  4. Drop level teaspoons of batter 3 inches (7.5 cm) apart on the sheets; they spread a lot. Flatten the piles with a wet fork.
  5. Bake one sheet at a time for 10 to 12 minutes, until deep golden at the edges and bubbling. Cool on the pan 5 minutes until firm enough to lift, then cool on a rack.
  6. Melt the chocolate gently in a bowl over barely simmering water or in short microwave bursts. Spread a thin layer on the flat underside of each cookie and place chocolate side up on parchment.
  7. Before the chocolate sets, drag a fork across it in wavy lines. Chill 20 minutes to set.

Tips

  • Small teaspoons of batter give the thin, lacy look; do not crowd the pan.
  • If the cookies spread unevenly, nudge the edges back in with a spoon right out of the oven.
  • Chilling makes the chocolate snap cleanly.
  • Good with espresso.
