Baking tools for this recipe

Instructions

  1. Heat the oven to 350 F (175 C) and butter a 1.5-quart (1.5 L) baking dish.
  2. Toss the apples with the 60 g sugar, lemon juice and cinnamon and spread in the dish.
  3. Beat the butter and 100 g sugar until pale and fluffy. Beat in the eggs one at a time with a spoonful of the flour.
  4. Fold in the remaining flour, then the milk and vanilla to make a soft batter.
  5. Spread over the apples, sealing to the edge.
  6. Bake 35 to 40 minutes, until the sponge is golden, springs back and a skewer comes out clean; the apples should be soft.
  7. Rest 10 minutes and serve warm with custard or cream.

Tips

  • Cut the apples small so they cook through.
  • Bramley or other tart cooking apples hold up best.
  • Use a dish with a wide surface so the sponge cooks evenly.
  • Bake until the sponge reaches 160 F (71 C).
