Baking tools for this recipe

Instructions

  1. Preheat oven to 325°F (163°C). Spread 450 g raw shelled almonds in one layer on a rimmed baking sheet.
  2. Roast 10–14 minutes, stirring once, until centers are fragrant; cool until pleasantly warm rather than hot.
  3. Add all warm almonds to a sturdy food processor. Process for 8–15 minutes, pausing to scrape the sides and rest the motor as needed; texture progresses from meal to clumps to glossy butter.
  4. Add 2 g fine salt, the 10 ml avocado oil and all listed measured flavor components; blend just until evenly incorporated.
  5. For the dark chocolate variation, stir in melted chocolate that has cooled to barely warm; do not pour scorching chocolate into nut paste.
  6. Transfer into a clean dry jar, date it and refrigerate. Stir gently before use if natural oil separation occurs.

Tips

  • A powerful food processor matters: do not add excessive oil simply because the nuts have not yet released their own oils.
  • Avoid moisture contamination; use a clean dry spoon and refrigerate the finished flavored spread.
