Instructions

  1. Chop enough pitted Medjool dates to measure 72 g (about 3 dates).
  2. Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream.
  3. Add chopped dates, 1/2 tsp ground cinnamon, and 1/2 tsp pure vanilla extract to the blender.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream.
  7. Serve immediately with a wide straw and long spoon.

Tips

  • Use soft Medjool dates for easier blending and a natural caramel sweetness. If dates are very dry, soak them in warm water for 10 minutes before blending to improve texture.
