Instructions
- Rub the cold butter into the flour, sugar and salt until it resembles coarse crumbs. Add the egg, yolk and zest and press into a smooth dough. Do not knead.
- Wrap and chill 1 hour.
- Heat the oven to 350 F (175 C). Roll two thirds of the dough to 1/4 inch (6 mm) and line a 9-inch (23 cm) tart pan with a removable bottom. Trim the edge.
- Spread the jam evenly in the shell.
- Roll the remaining dough and cut strips; arrange in a lattice over the jam and press the ends to the rim. Patch any breaks with scraps.
- Bake 35 to 40 minutes until golden. Cool completely in the pan before removing; the jam will set.
Tips
- This dough is fragile; patch it in the pan rather than rolling it again and again.
- Cool the tart completely before slicing.
- Use a thick jam so it does not bubble over.
- Good with espresso.
