Instructions
- Dissolve the espresso powder in the water.
- Whisk the confectioners' sugar and salt in a bowl.
- Add the corn syrup, espresso water, and vanilla and stir until smooth and glossy.
- Adjust with water, 1/2 teaspoon at a time: thick enough to hold a line for outlining, or thinned until a drizzled ribbon disappears in about 10 seconds for flooding.
- Decorate completely cooled cookies and let dry until firm, 6 to 8 hours or overnight, before stacking.
Tips
- Corn syrup gives this icing a soft bite and a glossy finish; it dries firm but not rock hard.
- Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
- Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
- Storage: Store leftover icing airtight at room temperature for up to 3 days; stir before using.
