Instructions
- Pour 1/2 cup (120 ml) coconut milk beverage into a blender, then add 2 cups (480 ml) vanilla ice cream.
- Add 1/2 teaspoon (2.5 ml) pure vanilla extract.
- Blend on low speed for 10 seconds, then on medium-high speed for 20–30 seconds until thick and smooth. Avoid overblending.
- Check the consistency. If too thick, add 1 tablespoon (15 ml) coconut milk beverage at a time and blend briefly. If too thin, add 1/4 cup (120 ml) additional vanilla ice cream and blend briefly.
- Pour into a chilled 16-ounce glass and top with 2 tablespoons (30 ml) whipped cream.
- Serve immediately with a wide straw and long spoon.
