Instructions
- Preheat a small skillet over medium heat. Add the shredded coconut and toast, stirring frequently, until golden brown and fragrant, about 3-4 minutes. Remove from heat and set aside.
- In a saucepan, combine heavy cream, whole milk, coconut milk, granulated sugar, fine sea salt, and the vanilla bean seeds and pod. Heat gently over medium heat, stirring until sugar dissolves. Bring the mixture to about 175°F (79°C), just below a simmer, then remove from heat. Let steep for 15 minutes off heat.
- While the mixture is steeping, melt the butter in a small pan and toss the graham cracker crumbs with the melted butter until evenly coated. Spread the crumbs on a baking sheet and toast in a 350°F (175°C) oven for 8 minutes until golden and crisp. Let cool completely.
- Remove the vanilla bean pod from the cream mixture and discard. Stir in the vanilla extract.
- Chill the custard base in the refrigerator for at least 4 hours, or until very cold.
- Once chilled, churn the custard base in an ice cream maker according to manufacturer’s instructions until it reaches soft-serve consistency, about 20-25 minutes.
- During the last 5 minutes of churning, add the toasted coconut and toasted graham cracker crumbs to incorporate evenly.
- Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up before serving.
